Cooking Lessons To learn

Interested to learn traditional French cuisine ?

I offer cooking classes in small groups (4 people maximum) to transmit my knowledge in the best condition.

As I am perfectly bilingual, I can address an English-speaking public.
I can also come to your home.

Each cooking class includes the loan of an apron and cooking utensils, the learning of the menus, the recipe cards and finally the tasting.

Example of a recipe Café Gourmand

Macaroons

150g egg white
115g powdered sugar
350g icing sugar
175g almond powder

1) Mix the icing sugar and almond powder
2) Whisk the egg whites until soft and then add the caster sugar and continue whipping to a meringue
3) Now mix the icing sugar and almonds into the meringue, slowly with a spatula
4) Place the mixture in a piping bag and make small circles on a tray
5) Bake for 10 minutes

Chocolate ganache

Chocolate milk 425g
400g cream
50g butter
250g sugar
Guérande salt

1) Place the cream in a saucepan and bring to the boil, then add the sugar
2) Cut the chocolate and butter into small pieces and place in a bowl
3) Once the cream is hot, add the chocolate and butter, add the salt (to taste) and mix
4) Allow to cool
Once cooled use the chocolate ganache to glue the macaroons together.

Nougat Glacé

100g almonds
1/4 vanilla pod
2cl water
62g sugar

1) Place the almonds on a baking tray and brown in the oven at about 150°C for 15 minutes
2) Put the water, sugar and vanilla pod in a saucepan and heat to 118°C, add the almonds and mix et mélanger

500g whipped cream
62g egg white
75g sugar
20g glucose

3) Heat the water and glucose sugar to 120 °C
4) Whip the egg whites and slowly add the above ingredients once at 120°C
5) When the top is cold, add the caramelised almond and whipped cream mixture
6) Dress on a tube or terrine as shown

Chocolate and raspberry cake

150g unsalted butter
135g of dark chocolate 72%%
75g flour
150g sugar
3 egg yolks
3 eggs
50g raspberries

1) Melt the chocolate and butter
2) In a bowl, whisk together the sugar and eggs and add the flour
3) Add the melted chocolate to the above mixture
4) Take the mixture and pour into the baking tray, add the raspberries as shown
Bake at about 200°C for 6 minutes

Cooking workshop For younger children

Over 4 days, in the mornings and afternoons, I worked with young people aged between 12 and 14, making mini-burgers: the pupils were attentive and happy to devour their creations!
